Honeynut Acorn Squash

1 medium acorn squash, cut from the stem to the bottom, seeds scraped out
2 tbsp unsalted butter (we leave this out)
1 tbsp honey
1/4 cup coarsely chopped pecans
1/4 tsp pumpkin pie spice

Preheat oven to 350 degrees F.

Place halved suash cut-side down in a microwave safe bowl with water covering 1/2 of the squash.  Microwave for 5-6 minutes or until you can easily stick a fork thought out the meat of the squash.

Hollow out the meat of the squash into a bowl, trying not to pierce the shell.  Use a fork to mash the ingredients and mix the ingredients together.  Place mixture back into the squash shell.  Smooth the top of the mashed-squash-seasoning mixture and place into the oven and bake until lightly browned and caramelized, about 20-30 minutes.  Serve immediately, scooping the mashed squash out of the squash shell to serve.
